About the winemaker
Théo Dancer behoort tot de jongste lichting wijnmakers in Bourgogne en hij werd geboren op het domein van zijn vader, Vincent Dancer, in Chassagne-Montrachet. Théo heeft duidelijke ideeën over wijnbouw en vinificatie, namelijk dat de natuur bepaald. In de wijngaarden zo min mogelijk ingrijpen en hij is een groot voorstander van boslandbouw. Hij bewerkt alle wijngaarden biologisch en in de kelder wordt eveneens niet ingegrepen. Théo werkt niet met nieuwe eiken vaten en ontwijkt sulfiet zoveel mogelijk. Naast de vinificatie op het familiedomein heeft hij sinds 2021 ook zijn eigen négoce en is hij verantwoordelijk voor de vinificatie en wijngaarden van Roc Breïa.
