Wine & Game 

Game has a distinctive flavor, with a deep, earthy undertone and aromas that can range from forest floor to mushrooms, autumn leaves, and/or dark fruit. These seasonal dishes require wines that complement the characteristics of game. Ripe, earthy wines with notes of blackberry, cherry, spice, and possibly leather or tobacco elevate the dish.

Tips for the perfect wine-game pairing 

 • Pay attention to preparation: Roasted game requires lighter wines than braised game. 

 • Sauces are key: A wine should complement not only the meat but also the sauce – think acidity, sweetness, or spice. 

 • Serve at the right temperature: Serve full-bodied red wines at 16–18°C for optimal expression. 

 • Aerate the wine: Decanting helps young, full-bodied wines better express their aromas.

Château Tréviac Corbières, France - Syrah and Grenache 

Perfect with: Wild boar stew or venison ragout This powerful red wine from the Corbières excels with ripe berry aromas, spice, and a hint of pepper. The Syrah and Grenache give the wine a robust structure that complements slow-cooked game dishes perfectly. Think stews with juniper berries or rosemary – this Corbières truly shines. 


Dos - Rafael Cambra Valencia, Spain - Monastrell, Cabernet Sauvignon, and Cabernet Franc 

Perfect with: Grilled wild rabbit or hare with thyme 

A wine with deep notes of ripe black fruit, licorice, and herbs, sourced from old Monastrell vines and Cabernet vines over 35 years old. The Dos is powerful yet with soft tannins, making it an excellent pairing for dishes featuring game that has a more subtle character than, for example, venison. The Spanish sun gives the wine a certain warmth in the glass that contrasts beautifully with the earthy flavors on the plate.

Ventoux Vieilles Vignes - Domaine Font-Sane Rhône, France - Grenache and Syrah

Perfect with: Venison steak with mushroom jus

This old-vine Rhône wine offers intensity and elegance. Rich in dark fruit, spice, and earthy notes. The structure is full-bodied yet refined – ideal with rosé roast venison with a game stock and wild mushroom sauce. The Ventoux has enough freshness to balance the richness of the dish.


Achkarren Spätburgunder - Weingut Josef Michel Baden, Germany

Perfect with: Pheasant or partridge with creamy mushroom sauce 

Spätburgunder, the German counterpart to Pinot Noir, is lighter than the previous wines, yet rich in earthy finesse. The wine has aromas of cherries, undergrowth, and a subtle oak note. Ideal with lighter game birds, especially when combined with creamy or buttery sauces in which mushrooms play the leading role.

Zweigelt - Weingut T+R Triebaumer Burgenland, Austria 

Perfect with: Duck breast with red wine sauce or venison pâté 

Zweigelt is a versatile grape variety that produces wines in Burgenland with soft tannins, a juicy body, and notes of black cherry, spice, and earthy warmth. This wine pairs perfectly with both pan-fried duck breast and a rich venison pâté on toast. The wine's crisp acidity provides balance and refreshment. 


Côtes-du-Rhône "Damon" - Domaine Charvin Rhône - Grenache and Syrah 

Perfect with: Hare stew or venison stew with plums
