Veronica Ortega is undoubtedly the most successful and unconventional winemaker in the increasingly popular Bierzo region. Born and raised in sun-drenched Cádiz, she is now deeply rooted in northwestern Spain, in Bierzo.
Veronica's journey into the wine world reads like an adventure novel. After her studies, she traveled the world and worked for some of the biggest names in winemaking: Clos Erasmus and Álvaro Palacios in Priorat, Comte Armand and Domaine de la Romanée-Conti in Burgundy, Combier in the Rhône, Burn Cottage in New Zealand, and Niepoort in the Douro. But it was her time with Raúl Pérez in Bierzo that would define her future: it was there that she lost her heart to Mencía.
In 2012, she started her own project in Valtuille de Abajo. With a small production—around 40,000 bottles per year—and a focus on quality, it quickly became a cult favorite. Each bottle tells the story of the terroir, the varietal, and the winemaker forging her own path.
Veronica has fallen head over heels for Mencía, a red grape that reminds her of Pinot Noir and sometimes even Syrah from the northern Rhône. She especially appreciates Mencía's ability to reflect the terroir: a subtle mirror of the soil and climate. Crucial to her approach is the perfect harvest timing – a few days can make the difference between rustic, overripe fruit and fresh elegance.
Besides red, she also makes a small amount of white wine from Godello, a Galician grape also known from Valdeorras. Her red wines are often field blends, in which small amounts of white grapes like Godello or Doña Blanca contribute finesse and balance. The result? Wines with a natural freshness, light structure, and excellent drinkability.
Veronica's vineyards are spread across several unique terroirs in Bierzo. Most of the plots are located on the poor, sandy soils of Valtuille – ideal for elegant red wines. In San Juan de la Mata, at an altitude of 650 meters and on pure limestone, she produces her white wines. In Cobrana, her eponymous cuvée comes to life – both powerful and refined. The eight plots, rich in blue schist and clay, are situated here at an altitude of 700 meters.
In the cellar, she works with minimal intervention. For the base wine, Quite, destemming takes place with skin maceration and fermentation in stainless steel, followed by aging in large barrels, barriques, and some in amphora. Her other wines are fermented whole-bunch in large open barrels of 5,000 liters, followed by aging in barrels and amphora. Veronica deliberately keeps extraction to a minimum – it's all about finesse and freshness. Sulfite use is minimal, and she applies biodynamic principles in her vineyards.
